Who says you can't have pie for dinner and dessert? Here is a great example that you can have both. What is even better is that they are both quick and easy recipes. Chicken Pot Pie is a great week day dinner because it is what I like to call a "one bowl" meal. Everything is combined in one dish meaning less mess to clean up.

Southern Chicken Pot Pie Recipe

Prep Time: 10 minutes Cook Time: 30 Minutes

4 chicken quarters, boiled and diced (if you are in a hurry, you can use canned chicken)
1 cup of frozen vegetables (canned mixed vegetables will work also)
1 stalk of celery
1/2 cup of onions, diced
Salt
Pepper
1/2 Tbl fresh rosemary , minced
1 Tsp fresh tarragon, minced

TOPPING:
1 egg
1/2 cup of milk
1 cup of biscuit
mix

1. Sautee the onions and celery together until soft.
2. Mix the frozen vegetables, chicken, cream of mushroom, rosemary, and tarragon together.
3. Preheat oven to 350 degrees.
4. Add salt and pepper to taste.
5. Mix in celery and onion. Stir until uniform.
6. Pour mixture into you baking dish.
7. Mix the egg, milk, and biscuit mix together and pour on top of the vegetable mixture.
8. Place in oven and bake for 30 minutes or until light brown.
9. Let sit for 5 minutes and serve.
