Fried Eggs, Crispy Bacon, Southwestern Hashbrowns, and Flat Biscuit with Butter and Maple Syrup

Growing up my I always loved staying with my grandmother because she always cooked a full breakfast.  We would always have grits, eggs, biscuits, bacon, sausage, jams, gravies, and fresh juice and coffee.  Needless to say, she spoiled me and my grandfather.  This was an everyday occurence at her house, but for me it has to be a weekend treat.

We all have our favorite breakfast foods depending on where we live and how we were raised.   You may enjoy waffles, fresh fruit tarts, or steak and eggs.  Either way, they all take longer to make than most of us have during the week.  Pick one morning each weekend and make your family's favorite breakfast items and enjoy the time together without having to rush through it all.

Here is my Saturday's breakfast.

1. Homemade Southwestern Hash Browns

4 - potatoes shredded
1/2 - sweet onion diced
1 clove of garlic - minced
1 tbl fresh sage minced
Salt
Pepper
1 tsp red pepper flakes

- combine all ingredients and cook in a pan on medium high heat with 2 tbl of oil.  Let it cook for 5-7 minutes on one side until brown and then flip and brown the other side.
- I added a seared slice of a tomatillo on top of the finished hashbrowns.

2. Fried Eggs
- prepare to the desires of your family.
- these are over easy, with salt and pepper, and parsley.

3. Crispy Bacon
- I like to use thick sliced bacon, but any will work just fine.
- Save the bacon grease to fry the eggs in

4. Flat Homemade Biscuits
- My son helped me make homemade biscuits a few weeks ago.  He rolled them 1/8" thick instead of 1/2" thick.  Now we have flat biscuits in the freezer.
- I like to take the cooked biscuits and add a little butter and a some maple syrup on top of the buiscut.  The thin buscuit works well with this dish without giving you too much "bread" to over power the rest of the dish.

With today's busy schedules, it is hard to sit down and have a meal with all of the family without feeling rushed.  A nice weekend breakfast is a great way to accomplish this.  Not only will you get to spend a great time with the family, but you are also making great memories.

Enjoy!

3 Loaves of Banana Nut Bread

Have breakfast ready before you go to bed tonight.  This recipe for banana nut bread is simple to make and can be done on the weekend or one night.  It makes 3 loaves so you can freeze two for breakfast down the road.  Banana nut bread is known as a "quick bread" because you do not have to wait on the yeast to rise.

Banana Nut Bread

Prep Time: 10 minutes       Cook Time: 40 minutes

Ingredients:

3/4 cup of shortening
2 1/2 cups of sugar
3 eggs
1 1/2 cups of crushed bananas
2 tsp vanilla
3 cups sifted plain flour
1 1/2 tsp baking soda
3/4 tsp cinnamon
3/4 tsp salt
1 1/4 cup chopped pecans

1. Sift flour, baking soda, cinnamon, and salt together.
2. In a separate bowl, mix shortening and sugar until creamy.
3. Add the eggs, bananas, and vanilla to the shortening mix and mix on medium until smooth.
4. Add flour slowly until all is mixed.  You should have a thick semi-dough batter.
5. Stir in the pecans.
6. Divide the batter between 3 loaf pans that have been greased and floured.
7. Bake for 35-40 minutes on 325 until firm.

Top: Cinnamon, Raisin, and Granola Bread;
Bottom: Walnut, Date, and Granola Sweet Bread

I have always loved the way breakfast breads smell while they are cooking. The aroma fills the house and it brings back great memories. Many people shy away from making breads and sweet breads because of the amount of prep time that is involved and working with yeast can be intimidating. However, I encourage you to try this recipe and I think you will be hooked.

The most time consuming part of making bread is giving it time to rise. However, during this time you can be working on other projects around the house. You need to plan for about three and a half hours to finish this recipe. Don't quit yet, two and a half hours are rising times.

Cinnamon, Raisin, and Gronala Breakfast Bread Recipe

This recipe makes 3 loaves
Prep time: 3 hours
Cook time: 45 minutes

Ingredients:
1 1/2 cups milk
1 cup warm water (around 115 degrees)
2 (1/4 oz) packets of active dry yeast
3 eggs
1/2 cup white sugar
1 cup raisins
1 cup granola
8 cups all-purpose flour
2 tablespoons milk
3 tablespoons ground cinnamon
2 tablespoons buter, melted

1. Warm 1 1/2 cups of milk on the stove until it bubbles. Remove from heat and let cool until lukewarm.
2. Dissolve yeast in warm water and set aside until it looks like a froth or 10mins.
3. Mix in eggs, sugar, 1/2 cup of butter, salt, raisins, and granola.
4. Stir in cooled milk slowly. ( If the milk is too hot, it will cook the eggs.)
5. Add the flour slowly to make a stiff paste.
6. Sprinkle the counter with flour and knead the dough for a few minutes until smooth.
7. Butter a large mixing bowl on the bottom and sides.
8. Place the dough in the greased bowl and cover with a warm damp towel. Place the bowl in the microwave and allow bread to rise until it doubles. (The microwave keeps the air warm and humid causing the dough to rise quicker.)
9. You now have about 1 1/2 hours to find something else to do.
10. After the dough has risen to twice its size, roll it out on a floured surface in the shape of a rectangle about 1/2" thick.
11. Rub 2 tablespoons of milk all over the top of the dough to moisten.
12. Combine 1 cup of sugar and 3 tablespoons of ground cinnamon in a bowl.
13. Sprinkle the cinnamon and sugar mixture all over the dought. Be sure to cover the entire surface of the dough.
14. Roll the dough along the long edge into a tight roll.
15. Cut the roll into thirds.
16. Place the loaves into three well greased 9X5 loaf pans.
17. Let rise uncovered for an hour.
18. You have another hour to play with.
19. Preheat the oven to 350 degrees.
20. Cook the bread in the oven for 45 minutes until lightly brown.
21. Remove from oven and spread melted butter on the tops of the loaves.
22. Let cool for 20 minutes and then remove from pans.
23. Allow the bread to completely cool before slicing.

Enjoy!

You can freeze the extra loaves to use at another time. Be sure to take them out of the freezer the day before you plan to use them.

Blueberry waffles with powedered sugar, warm maple syrup, and butter, a cheddar and fresh herbs omelet, and crispy bacon

This is a great inexpensive meal that can be cooked, plated, and on the table in only thirty minutes. For my family of four, this meal only cost around $7. Here is how I did it.

Preheat the waffle maker to your desired color (most waffle makers can be set for light, medium or dark). Mix your waffle mix according to the directions on the bag. Spray the waffle maker with non-stick spray, add some batter and close the waffle maker. I recommend Krusteaz.
pancake and waffle mix from Sam's Club. It works great for pancakes and waffles and is very inexpensive. You can get a ten pound bag for around $6.50 and it will make a lot of pancakes and waffles.

While the waffles are cooking, prepare your favorite type of bacon. I usually cook mine in the microwave on a microwave bacon dish. It only takes 5 minutes and you can use the left over bacon grease to fry the omelets in. Cooking the bacon in the microwave not only saves time, but it is also a safe way to allow the kids to help with the cooking.

Be sure to keep cooking more waffles while the bacon is cooking. Always respray the waffle maker with non-stick spray before you add more mix; it will save you time and a lot of frustration. I used fresh chives and cilantro in my omelets for this meal. If you do not have fresh herbs, dried will do just fine. Dice up the fresh herbs, or if you are like my wife, use an herb mincer. They are very inexpensive and easy to use. Set the herbs aside for now.

Making omelets can be intimidating at first, but they are really simple to make. I recommend purchasing a small Omelet Pan, it really makes the the process less frustrating. Take a teaspoon of the left over bacon grease a heat it on medium heat in the omelet pan. Scamble six eggs (or more if needed) with 1/2 cup of milk and salt and pepper to taste. Pour a small amount of the eggs into the omelet pan. VERY IMPORTANT; only pour enough of the egg mixture to cover the bottom of the pan, and then a little more. If you have too much of the egg mixture in the pan, the middle of the omelet will not be done and the omelet will break when you flip them.

Add your herbs and some of your favorite shredded cheese around the omelet. Once two thirds of the egg mixture appears cooked, take your turner and flip the omelet over. This takes a little practice, but after a few tries, you will have it down. The number one reason the eggs stick is becaused the pan was not greased enough before adding the eggs. Allow the eggs to cook for a minute on this side, then use the turner to flip the omelet in half. Place the omelet on your plate and continue this process until all four omelets are cooked

Now it is time to plate. This is a great time to get the kids involved. Take one or two waffles and place them on a plate leaving enough room in one corner for the omelet. Sprinkle a little powdered sugar on top of the waffle, then add the blueberries, butter, and syrup. Place the omelet in the corner and sprinkle some shredded cheese over it and then a few of the fresh herbs. Place the bacon next to the waffles and you are ready to eat.

If this is your first time to make waffles and/or omelets, it may take 45 mintues to 1 hour to complete this meal. After a few times, you can complete this meal in 30 minutes.

Don't forget to double the waffle recipe to have breakfast ready for tomorrow.
A few times a month my family gets in the mood to have breakfast for our dinner meal. I always enjoy this meal not only because I love breakfast foods, but it can be cooked and on the table in only 30 minutes. Another great advantage of cooking breakfast for dinner is that you can double the recipe of pancakes and/or waffles and you will already have breakfast for tomorrow ready.

Waffles, pancakes, and biscuits are great items to double the recipe on because the extras can be refrigerated and then warmed up in the morning for breakfast. Most kids love the frozen waffles in the freezer section at the local grocery store, but they can be expensive and most are small, meaning it takes more to fill everyone up.

If you don't already have one, consider investing in a waffle maker. They are inexpensive, around $25, and you will get years of use out of them. Waffles are a big hit with the kids at any meal, and they love to make them. A great way to get the kids involved in cooking is to mix a large batch of waffle mix on the weekend and let them cook a big stack of waffles. You can let them decorate some and eat them, then freeze the rest for a quick breakfast down the road.

I try to always think about how I can utilize some part of each meal in another meal down the road. Cooking breakfast for dinner is a great way to get a head start on the next day. Be sure to check out my next blog for and example of a great breakfast for dinner recipe that made a great 2 for 1 deal.
