Tacos with Salsa, Sour Cream, and Black Bean and Tomatillo Salad

This is a quick and easy meal to make after a busy day at work.  We all have different ideas of what items we like with and on our tacos.  The good news is the only thing that needs to be cooked is the meat.  All of the other ingredients can be prepared while the meat is cooking and then you will be ready to eat.



Prep time 10: mins      Cook time: 10 mins

Ingredients:

1-2lbs of ground beef
shredded cheese
hard taco shells
soft taco shells
lettuce
tomatoes
black olives
onions
salsa
sour cream
salt
pepper
taco seasoning mix

1. Brown the ground meat and drain.  Add taco seasoning and let simmer for 5 minutes.
2. Prepare all other ingredients.  The amounts will depend on the number of people in your family and their taste.


Black Bean and Tomatillo Salad

1 can of black beans
1 tomatillo diced
1 tbl fresh cilantro minced
2 tbl lime juice
1 tbl onion
Salt
Pepper

Mix ingredients in a bowl and place in freezer for 5-10 minutes to cool.


At our home, we setup a buffet line with all of the ingredients and let everyone fix their own tacos.  Some like soft tacos, some like hard shells, some like to make nachos, and some just mix it all up. 

This is a cheap and quick meal that everyone loves to eat.  Enjoy!
