Fried Eggs, Crispy Bacon, Southwestern Hashbrowns, and Flat Biscuit with Butter and Maple Syrup

Growing up my I always loved staying with my grandmother because she always cooked a full breakfast.  We would always have grits, eggs, biscuits, bacon, sausage, jams, gravies, and fresh juice and coffee.  Needless to say, she spoiled me and my grandfather.  This was an everyday occurence at her house, but for me it has to be a weekend treat. 

We all have our favorite breakfast foods depending on where we live and how we were raised.   You may enjoy waffles, fresh fruit tarts, or steak and eggs.  Either way, they all take longer to make than most of us have during the week.  Pick one morning each weekend and make your family's favorite breakfast items and enjoy the time together without having to rush through it all.

Here is my Saturday's breakfast.

1. Homemade Southwestern Hash Browns

4 - potatoes shredded
1/2 - sweet onion diced
1 clove of garlic - minced
1 tbl fresh sage minced
Salt
Pepper
1 tsp red pepper flakes

- combine all ingredients and cook in a pan on medium high heat with 2 tbl of oil.  Let it cook for 5-7 minutes on one side until brown and then flip and brown the other side.
- I added a seared slice of a tomatillo on top of the finished hashbrowns.

2. Fried Eggs
- prepare to the desires of your family. 
- these are over easy, with salt and pepper, and parsley.

3. Crispy Bacon
- I like to use thick sliced bacon, but any will work just fine.
- Save the bacon grease to fry the eggs in

4. Flat Homemade Biscuits
- My son helped me make homemade biscuits a few weeks ago.  He rolled them 1/8" thick instead of 1/2" thick.  Now we have flat biscuits in the freezer.
- I like to take the cooked biscuits and add a little butter and a some maple syrup on top of the buiscut.  The thin buscuit works well with this dish without giving you too much "bread" to over power the rest of the dish.

With today's busy schedules, it is hard to sit down and have a meal with all of the family without feeling rushed.  A nice weekend breakfast is a great way to accomplish this.  Not only will you get to spend a great time with the family, but you are also making great memories.
