Southern Green Beans

This is a simple and quick recipe for a diffent take on green beans.  This recipe is full of flavor and will quickly become a favorite dish for your family. 


Prep Time: 10 minutes     Cook Time: 15 minutes


Ingredients:

6 slices of bacon chopped
2 lbs of fresh green beans (you can use 2 cans of green beans if you do not have fresh)
2 cloves of garlic minced
1/2 red onion sliced
1 lb red potatoes (quartered)
Salt and Pepper


* If you are using fresh green beans, cook in boiling water for 3 minutes, then place in ice water for 3 minutes.  This will give your bean a nice crunch.

1. Cook the bacon in a large skillet.  Remove the bacon pieces and leave the bacon fat in the skillet.
2. Boil the potatoes until soft.
3.  Add the onions and garlic to the bacon fat and cook until soft.
4. Add the green beans and cooked potatoes to the bacon fat, onions, and garlic. Add salt and pepper to your taste.
5. Cook on medium heat for 5 minutes stirring to evenly coat the beans and potatoes.
6. Add the bacon pieces and cook on low for 5 minutes.
7. Serve with your favorite roast or meat.
